As a preparation for being a vegetarian, I didn't eat pork or beef for several years. I was gradually helping my body get accustomed to no meat then eventually I was going to give up chicken and seafoods. But that changed when I met my husband. He's from Batangas ... with all the fiesta I attended, my self control broke down and succumbed to some meat. A story of a frustrated vegetarian. Oh well, that's life. <BR/><BR/>My friends who started the vegetarian program with me are now full pledged vegans. I had lunch with them a few months ago and they took me to a vegetarian restaurant in Greenhills. I was amazed at how some dishes looked like real meat and fish but they were actually made from components of soya and vegetables. If you like them spicy you can try following recipe. The ingredients are 2 raw mango, 8 red chillis and 6 bird chillis (both boiled), 2 tsp shrimp paste (we call them terasi or belacan in Malay language), 1,5 tsp. salt, 2 tsp. sugar, and 1 tbsp. of fish sauce. Cut the mango julienne, ground the chillis, shrimp paste, salt and sugar (or you can food processing them but make sure not too smooth), add in the fish sauce and mix well. Add in the julienne mango and serve with the fried fish.
